Happy 2016!!

Wow, it feels like yesterday I was writing this post, welcoming 2015. I say the same thing every year but it is honestly crazy to see how much has changed in one year. As I was writing out my Christmas cards this year I couldn’t help but see how many changes have happened to my family & friends. So many people celebrated such amazing times. A few of my cousins expanded their families welcoming babies, friends got engaged, people took trips, family & friends bought homes. I can’t help but be so happy for everyone in 2015.

Chris & I made a goal this year to focus on work in 2015 & focus on our careers. I was lucky enough to be able to get another promotion this year & truly show my strengths at work. Chris has taken his career to the next level & is working on getting his certification. We have taken fun trips & celebrated exciting times with friends & 2016 had just as much excitement planned.

Of course we will have our annual Big Bear trip with friends this spring & going to Scottsdale to start off baseball season with Spring Training. We also plan on heading to Vegas again in June to see both of our favorite singer from childhood, Garth Brooks, perform, but we will be starting the year by heading to Connecticut to spend some time with my family.

I am super excited to see where 2016 takes us as a couple & individually. I plan on making the most of the last full year of my 20s before I hit the big 3-0. 2015 was very work focused. I refocused my blog, Chris had his classes at night. Ironically this is our first weekend off together in a few months & we are both sitting at the table writing & studying right now. My goal for 2016 is to make the most of every moment & create a more sensible work life balance.

Last year when I made my goals I was very specific & the truth is, much of my goals are not what I am focusing on right now. I think last year I was finding where I wanted to be & what I wanted to do as I wasn’t happy at work & didn’t know how to take this blog to a fun & natural place. Now I am in a much better place at work, working on my blog makes me inspired & it is fun, which makes looking forward easier & exciting.

This year I know what I am focusing on… & while my personal & professional goals are very detailed, I am leaving them pretty much open as I don’t know where we will be by the end of the year. There are many changes that can happen in 2016 & instead of honing down & planning for a path I am not 100% sure of, I am going to keep my goals to myself & just simply push forward.

Weekend Update: Beer & Wine Tasting

Hello friends! Hope everyone had a good weekend! I had the weekend off for the first time since our trip back in the end of July so we jam packed it with fun with friends & food. Saturday morning I woke up after an overnight shift at work to Chris & our friend “the other Megan” unloading our former storage shed into a new, nearby storage shed within our complex. Since they had been up since the ripe old hour of 8 o’clock I thought I’d be nice & whip up some chorizo & eggs for breakfast for them.

As we vegged a little & took our time getting ready for the rest of the day it was really nice to catch up with Megan. She lives about 2 hours away from us in Orange County so we don’t get to get together as often as we would like. We spent the evening on Saturday with some other friends at an event at Downtown Disney.
Okay, spoiler, Chris works for a company in Downtown Disney which held a beer tasting even… & that’s all I am really going to say about the location. Twice a year they shut down their venue to bring in 18 local breweries. It’s a lot of fun & you get to try a ton of beers you normally wouldn’t.

My favorites of the night would have to be the Prickly Pear Cider from Crispin Cider or the Steller IPA from North Coast Brewing Company in Fort Bragg, CA. Yum! My least favorite… a 15% ale that tasted like I was drinking straight bourbon… wowza! I definitely had to wash that down with a plateful of their loaded mac & cheese with pulled pork & pico de gallo.

Before the event started we headed over to the Mexican restaurant in Downtown Disney, Tortilla Jo’s, & snacked on a strawberry mint margarita & some table side guacamole. Mint & strawberry was perfectly refreshing for the 100 degree day.

We called it a night pretty early & everyone crashed at our place where they watched movies & Megan & I knocked out early.

The next morning we took full advantage of my weekend off, & our need to pick up our wines from our wine clubs & headed down to Temecula Wine Valley for a day of tasting & relaxing. But again… the sun did not hide. It was 105 all day & it was pretty killer all day in the sun. Chris & our friend Patrick thought it would be fun to play a round of bocce ball but I am pretty sure they were regretting it after about 10 minutes. Us girls were smart and ate our pizza in the shade. Hey I will take 95 degrees over 105 any day!

It was a great weekend with friends that we don’t get to see too often but Monday everyone was back to work. I am definitely glad I was able to step out of my beer bubble & try some new tastes. With the holidays fast approaching it looks like I will have one more free weekend before my life will be over taken by crazy mall hours & my retail life. Next month we are heading to Vegas for a quick overnight trip to celebrate Chris’s sister’s 21st birthday! I have a few spots that I can’t wait to visit but does anyone have any suggestions of places to go, things to eat, & drinks to drink? We are always up for new & exciting adventures. Let me know!

Hey there again!

FloridaHey guys, I am back! As you can see my little section of the blogosphere has had quite the face-lift in the past few months. After a little over a year blogging I thought it was time to take my blog to the next level and that started with the look of it. The most important thing I thought of while redecorating my blog was making sure it was a clean layout and easy to navigate to make sure all of you can find whatever you want over here.

And speaking of finding what you want, the content has had a little pick me up as well. Or rather a the content went back to it’s roots. When I started my blog in October 2013 I wanted to express my love for food and cooking. I am a home cook. I have learned from my mom, copied recipes from my grandmas and messed up plenty of dishes to become the cook I am today. For a little while I veered off the course that Megan and Eggs was originally created. Now I am going back to what I love which is cooking, creating and sharing amazing recipes with real friends and virtual friends.

Besides sharing my favorite dishes with all of you readers I plan on sharing travel tips and stories. Traveling is something that I am passionate about and truly enjoy. There is nothing better than planning a trip, heading to the airport, and getting away for a little bit. Whether it is to sight see and explore a place you have never been or completely get away and relax somewhere on a beach, either way, I completely love traveling and would love to share my experiences with you.

And we haven’t really been staying still over here on the west coast. My boyfriend, Chris, and I went on a trip to Jupiter, FL where we were able to both get away from work and completely relax while visiting with family. And in just a few weeks we are going on a little road trip to Portland, Oregon which I am so excited for, as well as a trip or two to Vegas this fall.

Being able to share the food, drinks and places we go is something that I am beyond happy for and truly passionate about. I am excited that I am able to share with you everything I am experiencing, cooking and the placing I am wandering to. Check back in for my journey!

As a high school and college student I worked hard to play hard. Shit, I may have even played harder before I was 21 than I did after I was 21. Every night was a new adventure, a new party or a new event. I had to be at everything, even if it meant I had to wake up early the next morning to go to work. Now, at the ripe old age of 27, I am like a 90 year old lady. Give me a glass of wine, good TV show and I will be in bed by 10:30.

There are a ton of summer jobs anyone at any age can pick up to make extra money. Take advantage of the long days and get a little extra work in before that late night dinner outside. Continue reading

Challenge: Week 9

Challenge: Week 9

Well my second month of my 12 Months to a Healthier You Challenge has come and gone and I have to say, I didn’t do as well as I had hoped. Instead of focusing on eating more fresh fruits and veggies I was trying to eat better all-around by cutting out fast food and focusing more on protein dishes. Well my friends, I failed miserably.

For the month of March the focus is to drink more water.  My personal goal is to drink 6 to 8 glasses of water a day and totally cut soda out of my diet. I don’t ever buy a bottle or can of soda to keep in the house, but I love me some fountain Dr. Pepper. While cutting out the soda I am also going to eat more balanced meals. I am not going to say I will cut one thing out of my diet completely like I am with soda but this month I am going to track what I eat in a little diet diary. In two weeks in will be able to give you an update on how I am doing.

My plan is to continue going to the gym 3 to 4 times a week and hopefully lose 8 pounds by the end of March. I have 3 or 4 weddings to go to this year with the first one this summer and I hope to be down 30 pounds by August. Any healthy meal suggestions anyone?
