Crock Pot Beef Stew

5 carrots
1 small celery head
1 medium onion
6 Yukon gold potatoes
2 beef bullion cubes
2 cups water
1.5 lbs stewing beef
Salt and pepper

Cube onions in 1 ½ inch cubes. Peel carrots and cut celery and carrots in 1-1 ½ inch cubes. Clean potato skins very well. Cube potatoes in 2 inch cubes leaving the skins on. Place all cut vegetables in bowl and add salt and pepper. Let sit for 5 minutes. Add bullion cubes into bowl and add 2 cups of water. Pour vegetable mixture into crock pot and top mixture with beef. Let cook on high for 7 – 8 hours.

Challenge: Week 3

Ok, so last week my goal was to go to the gym 4 times, including my Personal Assessment I had with a personal trainer. Unfortunately this is another week in the red I only spent two days sweating it up on the treadmill. And, to add insult to injury, I am sad to say my Personal Assessment was shockingly terrible. Holy out of shape!!! (I was serious about the injury part. Fell at the gym and busted my knee.. ew)

We started the assessment with a simple 5 minute warm up on the treadmill and a light job for another 5 minutes. I was being an over achiever and I actually started running at 4 minutes. There’s only so much walking this girl can do. By the time the trainer got back I think he was pleasantly surprised that I was going good at a steady pace. I was pretty impressed myself since I am not, and never have been a runner. But that’s where it turned around.

Once he brought me over to start working on my body sculpting and weight training I thought I was going to die. No literally, peel over and end my 26 years right then and there. Workouts that had been easy for me in the past were now a struggle. I felt like a 90 year old women lifting those 10 pound weights. This did nothing but confirm to me, I need to need to be coming much more regularly and doing something more than just my nice little run on the treadmill.

Next week’s goal is to stick with going 4 times a week but to add some strength training in there as well.

I discount my fail on my workout goal this week that’s to the first date syndrome. It’s always nerve wracking to go on that first date, put yourself out there, step onto that treadmill and run. Oh wait were not talking about running?

All week I found every excuse not to go to the gym. I over slept one day, another day my favorite TV show was coming back on. Well yesterday is where it stopped. I walked in there, got my barcode key fob thing, set up a workout assessment (complimentary of course) and took s little run on the elliptical.

This week, including tomorrow when I go I will only have gone twice missing my goal of 3 trips to the gym. Next week I will be better. I have my assessment scheduled for Tuesday and I plan on going 3 other times next week, making my goal 4 trips to the gym. Here we go!!


Greens and Beans

Escarole
Garlic
Canola oil
Chicken broth
Cantallini beans
Parsley
Black pepper

1. Wash escarole and then soak the leaves for an hour. Drain water and wash thoroughly again.
2. Sauté sliced garlic in oil on medium heat. Add escarole and fold into garlic and oil slowing greens to cook.
3. Drain and rinse beans.
4. Pour chicken broth into greens and add beans.
5. Lower heat and let simmer. Season with parsley and pepper. Eat over pasta or plain.

1. What is your favorite post from your blog?
Penne Ala Vodka!! My mom’s Penne Ala Vodka is one of my favorite meals. It brings me home no matter where I am.
2. What’s your favorite: Facebook, Twitter or Pinterest?
I check Pinterest and Twitter on an hourly basis. I am obsessed. But I love that everything on Pinterest is interesting, new and creative. There are so many ideas and it is such a creative platform.
3. What is your strength as a blogger?
I try it all and like most. There are very few foods I am not going to try to create, recreate or make my own. I love food and appreciate all the different types of food from around the world.
4. What is your most memorable meal?
Memorable in not such a good way: I tried to make enchiladas per my boyfriend’s mom’s recipe. (She’s Mexican) No bueno. Poor guy sat there like a champ and pretended to like it until I took a bite and nearly spit it out. Yucko!
5. Wine, beer or spirits?
Wine. I am a complete wino! I love all Pacific Coast wines.
6. What ingredient could you not live without?
Garlic. Garlic can make any meal better. It is something I never skimp on.
7. What is your top desired travel destination?
Italy. The food, the wine, the landscape. I wouldn’t be able to stay for just a week. Literally salivating just thinking about it.
8. What is your favorite food blog?
I honestly don’t have one. I view so many food blogs regularly, it’s hard to pick one.
9. What state/country do you live in?
California
10. What are you blogging goals?
My blogging goals are vast. I love writing about food and sharing my recipes and my family’s recipes but my personal finance blogging goals is to keep myself in check and hold myself accountable.
